Very first experience with any heritage flour. Have been baking bread for 60 years. Dough seems smoother, less elastic and hence easier to form into loaf shape , bread rose more than any flour I've used before, with only fine-grained bubbles. flavor is different and pleasant. And bread seems tenderer - I don't need knife to help cut toast or french toast. My bottom line - I did not know flours could make so much difference; I look forward to more flour experiments.
