Hi Becca, Thanks for letting us know. Because it's made with fresh made almond milk it is natural for it to separate and needs to be remixed again. I think it will be helpful if we put some directions onto the label so people understand. Once you mixed it was the texture okay or was there still an issue? We appreciate your input which we can put to use since we are making small batches. Janis
